For performing well in the office, in the gym and in our daily life activities, we need to fill our bodies with healthy and nutritious food. Our entrepreneur friends are always looking for an efficient way to nourish their bodies in a sustainable way. That's how they became interested in edible insects and insect protein.
We offered a jar of roasted mealworms to our friend Matt. If he's not cutting anything with his waterjet cutter, you can find him riding his bike in the mountains around Hong Kong and Shenzhen. Happy with his fresh box of mealworms, he came up with this delicious high-protein snack that gives energy to everybody in the office! We are happy to share his insect protein bar recipe with you.
Mealworms in a mix of protein sources for a high energy snack
Matt combined three different sources of complete proteins for an excellent assimilation and a wide range of amino acids. Eggs, dairy and insects are among the best sources of proteins. Just as the other animal protein sources, insect protein contains all the essential amino acids and is well absorbed by the body.
Walnuts and mealworms provide a combination of healthy fatty acids. They contain omega 3, omega 6 and omega 9 fatty acids that helps the brain to work efficiently for a long period of time.
Oats, rye and mealworms are high in fibre, it satisfies hunger, improves gut flora and provides satiety. Less craving and more happiness!
The different ingredients here provide a large amount of B-vitamins, some iron, calcium and magnesium. It is perfect for mood and energy level.
Now, here is the recipe; so you too can take care of your friends and yourself with some delicious home made insect bars.
Ingredients for 12 big chunks of insect protein bars
- One jar of MicroFoods™
- 65 gr of Whey Protein powder
- 175 gr of oats
- 75gr of rye
- 125 gr of walnuts
- 4 egg whites
Sweeten to your liking with 25 gr of honey or just toss 50g of dried fruit (raisins, chopped plums, chopped peaches, etc)
- Mix egg whites and protein powder first.
- Toss in all other ingredients after thoroughly mixed. You can keep some mealworms aside and add them on top
- Loosely place on pan and bake for 20-25 mins at 125c. The mealworms and the walnuts will start to caramelize.
- Break up into small bite sized pieces and bake for another 20-25 mins at 125c.
- Let cool and serve this high protein edible insect snack to your hungry friends.
You can keep your insect protein bars in the fridge for one week and you will have a clean source of proteins and minerals at your fingertips!
